21 Day Fix EASY Chicken Noodle Soup

Seriously WHAT happened! It was 70 degrees the other day and today there were snow flurries. Seems like a perfect day for some FIXate Chicken Noodle soup!

Ingredients:

  • 2 tsp. olive oil

  • 1/2 cup chopped onion

  • 2 cups sliced celery

  • 4 cups low-sodium organic chicken broth

  • 3 cups chopped cooked chicken breast

  • 1.5 cups sliced carrots

  • 1 tsp. dried oregano

  • 1/2 tsp. sea salt

  • 1/2 tsp. ground black pepper

  • 1.25 cups dry whole wheat pasta

  • 1/4 cup fresh chopped cilantro

Directions

  1. Heat oil in a large saucepan over medium heat

  2. Add onion and celery; cook, stirring frequently for 5 minutes or until onion in translucent

  3. Add broth, chicken, carrots, oregano, salt, and pepper. Bring to a boil. Add pasta, reduce heat to low; gently boil for 10 minutes

  4. Add cilantro before serving.

TIP-Substitute rice pasta or quinoa pasta for whole wehat pasta for a gluten-free option.
