The PERFECT Zoodle Recipe
I love my vegetti! If you have a veggie spiralizer I'm sure you've tried make Zoodles (Zucchini Noodles) before. The problem is if you don't make them right they can get squishy and water. I've experimented with a ton of different pinterest recipes (and a bunch of pinterest fails!) But lucky for you I have found the PERFECT most delicious way to make Zoodles so you don't have to experiment the way I did. Hope you enjoy!
What you'll need:
A veggie spiralizer (or veggie peeler)
A colander
Zucchini
Salt
Olive Oil
Garlic
After spiralizing the desired amount of zucchini, place them in a colander over a bowl. Sprinkle 1-2 teaspoons of salt (or more depending on the amout of zucchini you are using). Don't worry about the amount because you are going to be rinsing it off. Mix really really well, and allow to sit. The longer the better - but I say a minimum of 15 minutes. Doing this will draw the water out of the zucchini.
Once the water has been drawn out, rinse the zoodles.
Rinse, rinse, and rinse some more. Once you think you're done rinsing, rinse them again. Take it from someone who just passively rinsed this once. If you don't rinse it REALLLLLY well it will be very very salty.
Once rinsed, pat dry or use your salad spinner to get out the excess water. Place the zoodles in a pan with olive oil and garlic over medium heat and sautée until it's the desired texture - about 5-7 minutes.
When finished cooking, serve as desired. I served mine with some ITALIAN TURKEY MEATBALLS and tomato sauce. I put some parmesan cheese on Lee Lee's and she devoured it!
