Egg Cups

These

breakfast egg cups are so easy! I like to make a batch at the beginning of the week to have as breakfast or a snack on the go. Easy to whip up in a muffin tin and reheat for later. If you follow the fix this will be 1 red for 2 muffins depending on what you put in it. You can add anything that you like or might put in an omlette. I will share with you what I made for this particular recipe - but next week might be different :p

Ingredients:

  • 1 dozen eggs

  • salt

  • pepper

  • Sriracha

  • Parsley

  • Fresh Deli Salsa

  • Non-stick cooking spray

Directions

1.) Pre-heat oven to 350 degrees

2.) Crack eggs into a bowl, poke yolks and beat

3.) Add desired ingredients

4.) Spray muffin tin with non-stick spray

5.) Pour egg mixture into muffin tin

6.) Bake for 20-25 minutes or until a toothpick comes out cleanly after inserting

To reheat

Place in microwave for 30-45 seconds
