Slow Cooker Chicken Tortilla Soup
Slow Cooker Mexican Chicken Tortilla Soup

Makes 4 servings
I love this fixate recipe! There were some things I wanted to change, and to me soups should be in a slow cooker :) So I adapted it a little to make it something both my husband and I will love.
Ingredients:
4 6-inch corn tortillas
2 tsp. olive oil
1 small onion, coarsely chopped
4 celery stalks, chopped
1 can of whole peeled tomatoes
6 cups of chicken broth, divided
1 pound of raw chicken breast
1 tsp. oregano
1 tsp. chili powder
½ tsp. salt
½ tsp. black pepper
¼ cup chopped cilantro
Optional:
avocado, chopped
cheese (crumbled or shredded)
Tortilla strips or baked tortillas (just double up from the soup base)
Hot Sauce
Greek Yogurt/Sour Cream
Directions:
Pre-heat oven to 350
Line large baking sheet with foil or parchment paper
Place tortillas on baking sheet. Bake for 8-10 minutes, or until toasted and crispy. Remove from oven. When cool, break into pieces
Heat oil is a large saucepan over medium heat
Add onion and celery; cook, stirring frequently, for 5 minutes, or until onion is translucent
Add garlic cook, stirring frequently for 1 minute
Add tomatoes; cook, stirring frequently for 5 minutes, or until tomatoes are soft. Set aside.
Add onion mixture, 2 cups broth, and toasted corn tortilla pieces to blender (or food processor); cover. Blend until smooth
Add uncooked chicken to slow cooker. Add 4 cups of broth, oregano, chili powder, salt, pepper and blended mixture. Stir to combine ingredients. Cover slow cooker and cook 2-3 hours on high or 4-6 hours on low.
Serve with chopped cilantro. Add optional toppings such as avocado, cheese, additional tortilla pieces or plain greek yogurt.
Variations:
The original recipe from FIXate includes carrots. Neither my husband or I like cooked carrots so I omitted them from my version. Feel free to add them back in for ½ a green container.
For a vegetarian version replace chicken broth with low-sodium organic vegetable broth and omit the chicken breasts.

(if adding avocado or cheese, add a blue.
If adding addition baked tortillas add .5 yellow)
