Easy Mexican Chicken (21 Day Fix)


This recipe couldn't be easier!

Serves 2

Ingredients:

  • 8 oz of chicken breasts (I used tenders today)

  • 1 package of taco seasoning

  • 1 cup of salsa

  • 1/4 cup of greek yogurt

Directions 1.) Put the chicken and taco seasoning in a ziplock bag; shake well to coat 2.) Place the chicken in a casserole dish coated with nonstick cooking spray 3.) Bake in a 375 F oven for 25 minutes 4.) Top with salsa, bake 5 more minutes 5.) Mix in greek yogurt

Serve as desired - I used brown rice.

21 Day Fix Container measurements:

1 red, 1/2 purple, 1 yellow (if serving with rice)
