Taco Casserole
I LOVE Mexican food! Seriously I could eat it for every meal. I found this amazing taco casserole dish and decided to give it a try for my weekly new recipe and I’m sure it’s going to make it into the rotation of our regular meals. My hubby really enjoyed this one.
For the tortilla chips my hubby found these at target on sale! They were really yummy and had a much cleaner ingredients list than any other tortilla chip I’ve ever found.
Ingredients:
1 lbs lean ground turkey, browned and drained.
1 small onion diced
1 small taco seasoning packet
8 oz jar of taco sauce
Plain Greek Yogurt
Low fat cheddar cheese
Whole grain tortilla chips
Optional:
Diced Tomatoes
Shredded Lettuce
Avocado
Directions:
Preheat Oven to 350 degrees
Brown turkey and onion in a pan over medium high heat.
Drain off the liquid and add taco seasoning packet with 1/4 c water.
Stir until combined.
Add taco sauce and stir.
Layer a baking dish with crunched up tortilla chips
Put a layer of ground meat, thin layer of greek yogurt, tiny bit of cheddar cheese (emphasize TINY), then layer with shells, ground meat, greek yogurt and cheddar cheese on top.
Place in oven for 15 minutes
Top with lettuce, tomatoes, olives, avocado or any other topics you would like!
