Chicken Fried Rice
Growing up in New York I have a love for Chinese food. In Maryland there aren't too many good ones. And of course, there are none that are you good for you. I was so happy when I ran across this really simple recipe that my coach friend Melinda posted! It's become a weekly staple here in the Mudd house.
Ingredients *8 oz. chicken breasts *2 eggs *1 cup COOKED brown rice *2 cups of chopped veggies (I use the creole mix pre-made in the store.) *4 tablespoons Braggs Liquid Amino (if you can find it) or low sodium soy sauce to taste. Directions
*In a wok or large skillet, cook the chicken over medium high heat until fully cooked
*Remove chicken from wok, set aside
*Scramble the eggs in the skillet
*Add the veggies, rice, and chicken
*Stir and cook until everything is heathed through
*Stir in liquid aminos/soy sauce
Divide into two bowls and enjoy! *Scramble two eggs in a large skillet *Add veggies, rice and chicken *Stir and cook until veggies are thaw and all food is heated through. Everything was precooked so just need to heat. *Stir in Liquid Aminos and let heat for a few minutes *Divide into two bowls and ENJOY!!!
