Lasagna Soup (21 DF)
This has been one of my favorite recipes for a long time. I used ground turkey but I have made it with lean ground beef before too! It's so yummy it's hard to believe it's healthy AND 21 Day Fix Approved.
1 pound 93% lean ground turkey
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 (32-ounce) container low sodium chicken broth
1 (15-ounce) can tomato sauce
1 (14 1/2-ounce) can petite diced tomatoes
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
8 broken whole-wheat lasagna noodles
1/2 cup chopped fresh basil
Grated parmesan cheese
Shredded mozzarella cheese
Heat a large nonstick saucepot or dutch oven over medium high heat. Add the turkey, onion, bell pepper and garlic. Cook over medium-high heat, stirring occassion, until the turkey is browned.
Add the broth, tomato sauce, diced tomatoes, salt, and crushed pepper. Bring to a oil. Reduce the heat and simmer, stirring occassionally, until the flavors are blended (about 20 minutes.)
Add the lasagna noodes; bring to a boil. Reduce the heat and simmer, uncovered, stirring occassionally, until the soup thickens slightly and the noodles are tender, 10-12 minutes.
Remove from heat; stir in basil. Divide into 6 servings. Mix parmesan and mozzarella cheese in blue container and top soup with cheese.
