Chicken Parmesan (21 DF)

Serves 1; 1 yellow, 1 blue, 1 red, 1/2 purple

Ingredients:

*1 small boneless/skinless chicken breasts (4 oz.)

*1/4 container of whole wheat Italian breadcrumbs (1/8 cup)

*1/2 blue container of parmesan cheese (1 tablespoon)

*1/2 blue container of mozzarella cheese (1 tablespoon)

*1 egg

*3/4 container of your choice pasta (I used spaghetti - about 1.5 oz dried)

*1/2 purple container of organic spaghetti sauce (1/2 cup)

Directions:

1.) Pre-heat oven to 350 degrees

2.) Mix the egg in a small bowl and set it aside. In a separate bowl combine the breadcrumbs and Parmesan cheese

3.) Dip the chicken into the gg mix, coating both sides, and then palce the breast into the breadcrumb mixture. Make sure the chicken gets covered fully and then place it on a non-stick baking sheet.

4.) Place the chicken in the oven for approximately 20 minutes

5.) Cook pasta according to package directions while chicken is baking

6.) After 20 minutes, remove the chicken, spoon desired amount of sauce onto chicken. Top with mozzarella cheese. Place back in oven for 5 minutes or until cheese is melted.

7.) Warm remaining spaghetti sauce. Mix with cooked pasta.

8.) Mangia and Enjoy!
