Southwest Garlic Chicken Pasta (21 Day Fix)
I needed something other than brown rice last night. This really hit the spot.
1 yellow container (about 2 oz) of dried whole wheat spaghetti
1 red container (about 4 oz) of cubed chicken
1 green container (1 cup) of cooked spinach
1 teaspoon of jarred garlic
1 teaspoon of olive oil
sprinkle of parmesan cheese
salt, to taste
pepper, to taste
salt free southwest seasoning, to taste
Parmesan Cheese (if desired)
Cook spaghetti according to package directions
Sprinkle chicken with salt, pepper and southwest seasoning
Cook chicken over medium meat until cooked
Remove chicken from pan, keep warm
Sautée spinach with garlic until wilted
Combine spaghetti, chicken, and spinach. Toss. Sprinkle with parmesan cheese.(if desired)
1 yellow, 1 red, 1 green, 1 teaspoon (depending on if/how much cheese you use - add a blue)
